Recipe – Rice Cake

What do we need?

5-6 tbsp sugar about 80g

1/2 cup water about 125ml

another 150ml water

1tbsp oil (coconut, olive or whatever you like)

1/4 tsp baking powder

3/4 tbsp yeast

1/2 tsp seasame seeds

1 cup rice flour

If you would like to have different flavour, you may prepare other filling such as red bean, lotus or even chocolate.

Now, let’s start.

  1. Put rice flour in a bowl and add 125 ml water slowly and evenly. Mix them.
  2. Put sugar in the 150ml water. Boil them till the sugar melted totally.
  3. Add the hot sugar water slowly to the mixed rice flour. Mix them.
  4. Prepare another bigger pot and boil some hot water. Then, put the step3 mixed staff into the hot water and stir it about 10 minutes till it becomes more thick.
  5. Cooling step4 for 10 minutes.
  6. Put baking power into 1.5 tbsp warm water. stir it till melted.
  7. Put step6 into step5 and stir them.
  8. Cover step7 and leave it for 1-2 hours for fermentation.
  9. When you see some bubbles on step8, add 1 tbsp oil into it and stir them in on direction.
  10. Grease the inside of the cooking pan lightly and evenly with oil, then put step9 into it. Leave it for another 10 minutes.
  11. Put some sesame on it and steam it for 20 minutes with high temperature.
  12. After cooling down, you can cut them into pieces.

You can create different rice cake you like, be creative and do it.
